Interestingly, even a master of the culinary arts can get swept up in this trend. Chef Sung-jae Ahn (the only 3-star Michelin chef in Korea who rose to global fame as a judge on the Netflix series Culinary Class Wars) recently tried making it for his daughter. Instead of following the viral “Jjon-deuk” trend, he did things his own way and created a “Dubai Brittle” (like a rock-hard traditional Korean gangjeong) that was literally as hard as a rock!
After people online jokingly complained that it wasn’t “Jjon-deuk” (chewy) enough, the internet had a field day with his accidental “brittle.” He eventually released a Proper AS (After Service) Video where he finally nailed the signature chewy texture.
How to Make the Perfect Dubai Jjon-deuk Cookie:
- Prepare the Filling: Sauté the rare kataifi in butter until golden brown. Mix it thoroughly with pistachio spread and white chocolate.
- Make the Chewy Outer Layer (The Secret!): Melt marshmallows and butter over very low heat. Once melted, mix in cocoa powder and skim milk powder.
- The Technique is Key: Don’t let it become a “hard brittle” like Chef Ahn’s first attempt! Mastering the gentle heat for the marshmallows is the most important part. If the heat is too high, the sugar crystallizes and becomes too hard to bite.
- Assemble & Finish: Form the filling into small balls, wrap them carefully with the warm marshmallow dough, and roll in cocoa powder.

My Honest Review: Is it Worth the Hype?


I finally got my hands on one, and I have to say, the texture is insane. The outside of this Dubai Jjon-deuk Cookie is incredibly chewy (Jjon-deuk), but the inside is packed with a crispy, crunchy texture. It’s perfectly sweet—not too much, just enough to make you want another bite immediately.
However, there is one catch: the price. In Korea, we joke that eating 10 “Doo-Jjon-Ku” feels like spending 500 million won (approx. $400,000)! The perceived value is so high because they are such a rare and premium treat. You’re essentially eating a luxury car in cookie form.

Honest advice: Just go buy one. While you can find kataifi online if you’re willing to pay a premium, it has become incredibly expensive and hard to get your hands on. Combine that with the fact that getting that marshmallow skin perfect is an Olympic sport, and it’s much better to let the professionals handle the mess!
